Double Chocolate Brownie Goodness

OMG. I am in LOVE with the Dessert cookbook I bought at my meeting last month. I have yet to have something not turn out...knock on wood of course! These Mini Chocolate Brownie Biscotti's are NO different! They are wonderful! And the best part is....1 POINT! That's it! I even made them a little bigger, typed everything into my etools recipe builder and it's still only 1 POINT!! They are very tastey indeed, they do not taste low fat what so ever. Try them, you won't be disappointed!

Mini Chocolate Brownie Biscotti

2 cups flour
3/4 cup mini chocolate chips
1/2 cup cocoa
1 tbsp coffee granules
1 tsp baking soda
1/4 tsp salt
1 cup sugar
2 eggs
2 egg whites
2 tsp vanilla extract

Place oven racks in the upper and lower thrids of the oven and preheat to 350. Line 2 large baking sheets with parchment paper.

Put the flour, 1/4 cup of chips, cocoa, coffee granules, baking soda, and salt in a food processor. Process until the chocolate is finely chopped, about 1 minute. Transfer to large bowl. Put the sugar, eggs, egg whites, and vanilla in the food processor (you don't need to clean it from using it the first time). Process until the mixture is slightly thicker, about 1 minute. Add to the flour mixture, the remaining chocolate chips, and stir until well blended.

Spoon the dough onto baking sheet, forming two 14 x 1 1/2 in logs on each baking sheet, using 3/4 cup dough for each log. Bake logs until firm when lightly pressed, about 15 minutes. Rotate cookie sheets half way through. Let cool about 15 minutes.

Meanwhile, lower temperature of oven to 275 degrees.

With a serrated knife, cut each log crosswise into 1/2 inch thick slices, making a total of 56 slices. Stand the slices on the baking sheets. Bake until dry, another 15-20 minutes, rotating the baking sheets halfway through the baking. With a spatula, transfer the biscotti to racks and let cool completely.

**The original recipe's serving size was for 2 pieces = 1 POINT**

I made my pieces a little thicker (bigger) and got 36 pieces out of the logs. For 1 piece, it's still 1 POINT. For 2 pieces, it's 3 POINTS.

I bought the dessert cookbook too, but haven't tried anything yet. I have a potluck on halloween, perhaps I'll make something for that!
