Cake Cookies=WW Bliss

I love baking (obviously!) and I have tried several WW friendly baked goodies. While I love baked goodies (eating and baking), I hate to have to waste 3-5 points on a little 2x2 square of brownie or per cookie. Now that is never going to be a sacrifice I have to make again! With these little bites of heaven, and at only 1 POINT per cookie, I am set! The great thing about these cookies is that it is SO versitile! Today I was feeling like strawberry, next time I will try some Devil's Food cake, maybe as fall becomes more apparent I will try spice cookies, Easter could be lemon... the list is endless! HEAVEN! I love these because I can grab my usual 2-3 cookies without feeling guilty about it or using up a fourth of my points for the day. I have made non-WW cake cookies (FUNFETTI rocks my socks) but these are a little healthier.

How? you may ask? Well for one, instead of the normal oil that is in a cake cookie, I substituted apple sauce. Then instead of the eggs I used Egg Beaters. Voila! When I have made the cake cookies in the past, I always used frosting with them, not sure why I felt they needed frosting but I guess since I was using CAKE, it needed frosting. Well these actually do not need frosting on top. They are great without frosting! If you do not agree, I am sure you could find a low fat cream cheese frosting to use, but make sure to add the extra points. Here is the recipe, I highly reccommend these little bites of heaven, they are a great 1 POINT snack!

Cake Mix Cookies AKA Little Bites of Heaven!
(Source: Half My Size)

1 cake mix **I used Duncan Hines Strawberry Supreme**
1/2 cup unsweetened applesauce
1/2 cup Eggbeaters

Preheat oven to 350 degrees. Mix all ingredients together well. Drop onto ungreased cookie sheet (I used my little cookie scooper and got just the right amount of cookies). Bake for about 12 minutes until set. Allow to cool for 3-5 minutes on sheet before transferring them to waxed paper or cooling rack.

Makes 36 bites of heaven

WW POINTS: 1 per COOKIE!!

Ooh these look good. The problem is I'd probably eat 10 and defeat the whole purpose on them being 1 point. :P

How did you store these? I put them in a plastic container w/a lid, but found that they got too moist/sticky & stuck together! I tried a plate w/foil instead, and it still seemed to keep too much moisture in....

i have them in a covered container and they did stick together a little. maybe try separating them with waxed paper? :o)
