Mmmm....steak=healthy?!


Well after all of the goodies I have baked (and eaten!), I decided it was time to do something about how I eat and make a lifestyle change. I joined Weight Watchers today and I am looking forward to feeling better about myself and having more energy. This was my first day and I think I did pretty good. For supper, we already had some extra lean steak dethawed and so we needed to use that up. I came up with some steak sandwiches with onions and green peppers. They were very good! I served it with some 1% cottage cheese and felt great about my choices today! I do not have a picture of the actual sandwich, but this is the yummy goodness in the skillet!

Peppers and Steak Sandwiches

1 1/2 lb extra lean steak, sliced thinly
1/2 red onion, sliced
1 green pepper, diced coarsely
provlone cheese slices
Whole grain white buns
2 tsp olive oil
1 cup beef broth
garlic salt
Mrs. Dash seasoning mix
pepper
red pepper flakes

In non-stick skillet, season steak and saute using non-stick spray. Cook until light pink. Add beef broth and pepper flakes, simmer for about 20 minutes. This will make the meat so tender!

In seperate pan, heat oil. Add onions and peppers, cooking until translucent and soft. Do not brown them. Add meat to onion skillet and combine.

On griddle, scoop up some pepper and steak mixture and top with one slice provolone cheese, until melted. Scoop onto bun, serve with cottage cheese.

I'm a WW gal too (you'd never know it from my blog, but I usually give away the things I bake). One great thing the plan teaches you is moderation for everything, so there are no "bad" foods anymore. So have your steak, girl! :)
