It's Cookie, It's Cake, It's Cheesecake!


It's the perfect cookie! Totally a "that's the spot" creation, if I do say so myself! I had a block of cream cheese and some chocolate chips to use up. I was going to make muffins but I was craving a good chewy cookie. After digging around in my cupboard, I also found a chocolate fudge cake mix.. I went to Allrecipes.com and did some searching. I found this recipe for Cream Cheese Cookies. I altered it to what I had on hand and added in a little extra chocolatey goodness and the result was delicious. These little chocolate cookies taste like a chocolate cheesecake in your hand. Here is the recipe I used, after changing what I had to work with.

1 Chocolate Fudge Cake Mix (Duncan Hines is my favorite brand)
1 8oz light cream cheese
1 cup chocolate chips
1/4 cup butter, softened
1 egg yolk
1/4 tsp vanilla

Cream butter and cream cheese. Add yolk and vanilla; mix well. Slowly add cake mix, stirring after each addition. The batter will be very thick. I had to mix the rest by hand because my little hand mixer sounded tired. It worked better that way though. After it's all mixed well, cover and chill at least 30 minutes. It ended up in the fridge for about an hour while I ran some errands.

When ready to bake, preheat oven to 375 degrees. With a little scooper or teaspoons, drop cookies on a greased cookie sheet (I used my silicone mat and I LOVE how all my cookies turn out). Bake 8-10 minutes. Do not over bake! They will be a little soft, but set around the edges.

These cookies are very soft and literally fall apart as you eat them, but they are soo good. This recipe could be used with any kind of cake mix. I think Funfetti would be good or lemon cake mix. I got about 40 cookies out of this recipe with my little scooper.
