Easy Peanut-y Noodle Lunch For Me!



Being home during the summer is WONDERFUL, however....it provides the opportunity to eat out for lunch daily, which can get EXPENSIVE! So I have been looking for meals to make for lunch and have enough for a couple of days. Well, I have found that recipe! I have always wanted to try a peanut butter based noodle sauce, but many have fish oil or coconut milk in it and yuck! I found this recipe on the WC board, posted by mlr513. I modified it a little because I wanted to add some veggies to it, and it is so yummy!!!

Spicy Noodles with Peanut Sauce

10 oz spaghetti noodles
1/3 cup hot water
1/3 cup creamy peanut butter
2 tsp vinegar (I used rice vinegar)
2 tsp low sodium soy sauce
2 cloves garlic, minced
Red pepper flakes to taste (I used about a tsp)
1 tsp sugar (I skipped this because rice vinegar is already sweet)
1/2 cup each finely diced onion, green pepper, and seeded tomatoes

Boil water in large pot, add noodles and salt to taste. As noodles cook, mix the peanut butter and hot water in large bowl to smooth into a sauce consistency. Add soy sauce, vinegar, garlic and red pepper flakes and combine.

When noodles are done, drain and add to the sauce bowl. Add diced veggies and toss with sauce until well combined. Any leftovers are yummy cold as well! Enjoy!!

One of our favorites at home, I use Soba noodles and add coconut milk to the peanut sauce. Yours looks delicious.
